Annual porkapalooza Cochon 555 returns to Napa on January 29th to determine who reigns in heritage breed pork this year. Star chefs, including 2011 Cochon King & Queen of Porc Duskie Estes and John Stewart of Zazu Restaurant and Farm, Chris L’Hommedieu of Michael Mina San Francisco, and Mark Dommen of One Market Restaurant, will compete for the title with their creative snout-to-tail dishes at this touring event, which brings together five chefs, five pigs and five winemakers. Held at the CIA Napa, Tickets start at $125 and include independent wineries, a butcher demonstration, and savory dessert and Laurent-Perrier Champagne toast.
